Ethical overview

We produce exquisite handmade cakes using time honoured and cherished methods from hundreds of years ago. We build good working relationships with small like minded producers and in doing so, strengthen our local economy. We also support small food producing communities in the developing world through our partnership with Community Foods. Our goal is always to do business in an environmentally sensitive manner, seeking at all times to reduce our impact on the environment, from buying attractive recyclable packaging through to reducing energy consumption in our kitchen.

Environment

We have undertaken an environmental review with West Sussex County Council Sustainable Business Partnership. As a result of this joint venture, we now have in practice an environmental action plan. All our packaging must be at least 90% recyclable and be easliy recycled by the end consumer. All our printing is done with vegatable based inks with water based varnishes, on Forestry Stewardship Council recycled board and paper. Currently 60% of our waste gets recycled. This will increase to 75% in 2011, when we will have in place a plastics recycling facility.

Our purpose built kitchen has been designed for maximum daylight admittance, thereby reducing the need for lighting. However our lighting systems offer energy efficient consumption. We have since reduced our energy consumption by 20%. In 2010 we will be looking to source our energy from green sources.

Ingredients and Suppliers

We source ingredients and supplies locally wherever possible from small local producers. Our free range eggs' farm is 3 miles away in the neighbouring village. Butter is churned at a family farm in East Sussex, with other ingredients from small food producers throughout West Sussex, Kent and Community Foods in North London. We will not use any artificial ingredients, additives, preservatives or flavourings. All ingredients must meet our stringent quality control and will be rejected if not to a high standard or do not have a specification sheet. We are able to liase with our suppliers about an ingredient's provenance and traceability throughout the full supply chain.

Baking

We bake in small batches, usually only 10 - 20 cakes at a time, in traditional cake tins in stone based ovens, which yield a gentle, mellow baking temperature. All of our recipes are based on traditional family methods. We allow our cakes to cool naturally and do not use any forced chilling or freezing. Once cooled, they are decorated and carefully packed by hand.

Our packaging utilises fully recyclable materials, whilst adding to the visual appearance of the finished product and it provides excellent protection. We use a cake drum of recycled plastic with a card base and paper label. Our mailing boxes use  widely recyclable corrugated cardboard containers and protective inner sleeves. Any shred hamper filling is made from corn starch and therefore fully degradable or compostible by the end consumer or retailer.
