This cake is the essence of an English Summer, alongside cricket on a Sunday afternoon, fragrant cottage gardens and the country village fete. The heart of this gourmet handmade fruit cake lies in the bees of Blackdown Hill, West Sussex. It is their sweet honey that makes the warming English Mead we use to steep the vine fruits, apricots and cherries in this light summer cake. Finally we add a suggestion of mixed spice and decorate with the finest natural cherries.
